Pumpkin Spice Bread
3 cups sugar
1 cup vegetable oil
4 eggs, lightly beaten
1 can (15 oz) solid-pack pumpkin
3 ½ cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon (I double this)
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 cup water
In a large bowl, combine sugar, oil and eggs. Add pumpkin, mix well. Combine dry ingredrients; add to the pumpkin mixture alternately with water. Pour into two greased 9" x 5" x 3" loaf pans.
Bake at 350 for 60-70 minutes or until a toothpick inserted near center comes out clean. Cool 10 minutes before removing to a wire rack to cool completely.
